It's amazing how bread, eggs and milk can transform into this amazingly delicious brunch option. And French toast can take on many forms: try it stuffed, with variations on the bread type or as asandwich. Chef Zoe Nathan likes to make hers out ofbriocheto give the toast a decadent, custard-like texture. She tops each piece with tart cranberry sauce as a great alternative to the typical maple syrup. Vegan French Toast

For our vegan French toast, we dip slices of day-old sourdough in a rich, thick batter of almond creamer, flour, ground flax, maple syrup and brown sugar instead of the usual milk and egg. The inside of this French toast is not as custardy as the conventional kind, but the batter creates a sweet, golden-brown crust that we love.
