For me, this is a great recipe. I am one year out from a kidney transplant and trying to find fresh vegetable recipes that either doesn’t include added fat or sodium can sometimes be a challenge. I find this recipe flavorful, most likely because I’m use to unsalted foods and using the natural flavors of the vegetables.
Easy, but very bland. Needed to add seasoning including rosemary, thyme, additional garlic, oregano, crushed red peppers and asiago.
